Try this super simple courgette pasta sauce recipe, it’s delicious, gluten free, and made with only six ingredients!
What you’ll need (serves 4):
3 courgettes
3 cloves of garlic
Olive oil
2 tsp dried basil
1 packet of Thornleys Parsley Sauce Recipe Mix
300 ml milk (or dairy free alternative)
500 g gluten free pasta
To prepare:
Wash and chop the courgettes. Then place them on a lined baking tray, along with the garlic (you don’t need to peel the garlic for this). Drizzle with olive oil and season with salt. Roast in the oven at 180C for around 30 minutes, or until the courgettes are nice and brown.
Once the courgettes are done, transfer them to a blender along with the garlic cloves (make sure to squeeze them out of their skins — be careful if they’re hot!). Then, to the blender, add the basil, a splash more olive oil, a sprinkle of salt and pepper, the parsley sauce mix and milk. Blend until you have a smooth sauce.
In the meantime, bring a pot of salted water to the boil. Cook your favourite gluten free pasta. Once done, drain and then add the pasta back to the pot. Pour in the courgette sauce and stir it around for a little while on a low heat, just to warm the sauce up.
