It would be a bold claim to say that this is the world’s easiest tomato soup recipe. To be honest, we haven’t tried all the tomato soups in the world, so we really don’t know. But it’s definitely the easiest (and one of the tastiest) we’ve ever tried!
So here’s how to make a super simple, healthy, budget-friendly tomato soup (that also happens to be gluten free and vegan)…
What you’ll need:
1 onion, chopped
2 tins of chopped tomatoes
1 tube of tomato purée
2 teaspoons of sugar
1.5 teaspoons of salt
1 teaspoon of dried basil
Pinch of dried thyme
Pinch of black pepper
375 millilitres of gluten free oat or soya milk alternative
How to cook:
Fry the onion in a bit of butter for a few minutes. Add the rest of the ingredients (except the oat/soya milk). Heat the mixture until it starts to bubble, stirring frequently. Finally, add the oat/soya milk and bring it to a gentle simmer. Take the pan off the heat, then use an immersion blender to blend it into a smooth soup. Taste and season to your preference.
