One-pot dinners are, in our view, heavily underrated and underutilised. They’re the Swiss-army knife of midweek meals, the all-in-one saving grace busy schedules.
But of course not all one-pot meals are created equally, and for us it’s all about the rice — it’s hard to get wrong, easy to get right, and offers an almost endless variety of options. So keep reading for 5 of our favourite gluten-free one-pot rice dishes. And no, you don’t need a rice cooker — a good old pot with a lid will do!
Carrot Rice (Holy Cow Vegan)
This is one of our personal favourite one-pot rice dishes. The beauty of it lies in its simplicity — all you need is a few spices, some carrots and a handful of cashews. It’s simple enough that you can serve it as a side dish, whilst at the same time being satisfying (and tasty!) enough to eat as a main.
Spanish Rice and Beans (Dishing Out Health)
You’ll need a few more ingredients for this one, but it’s well worth it. It’s a pantry-friendly recipe that includes olives and diced tomatoes for a wonderfully vibrant flavour.
Quick One-Pot Vegetable Rice (veenaazmanov)
One-pot dishes are usually designed to be quick, but if you need it to be extra quick (think: less than 20 minutes), then you’ll definitely want to try this recipe. Using veggies like peas, green beans, and carrots, this simple and healthy one-pot rice meal is certain to be a crowd-pleaser!
One-Pot Rice and Beans (Vegan With Gusto)
Using a total of only 5 ingredients (including the rice and cooking water!) this recipe takes the crown for simplicity. It also calls for brown basmati rice, which makes a nice change to the white rice included in many other one-pot recipes.
Dirty Rice (Everyday Easy Eats)
Guaranteed to be tastier than it sounds, what we like about this recipe is its intense Cajun flavour. It’s loaded with spices, including oregano, thyme, paprika, and cayenne pepper. So if you’re looking for something full of flavour with a bit of a kick, then this is definitely a dish for you to try!
