Let’s be completely honest, it’s hard to beat the taste of mashed potatoes. This classic side comes in lots of different shapes and forms — smooth, lumpy, creamy, fluffy. It’s all a matter of preference, so of course we encourage you to get creative with the following recipe. It’s just a guideline for a Thornleys-style cheesy mash that we think you’ll love!
The secret ingredient in this one is, of course, a packet of our Cheddar Cheese Sauce Mix. This is what makes it extra special (and extra cheesy, obviously!).
For this one we won’t provide any specific measurements, as it’s all about tasting as you go until you reach the perfect consistency and creaminess for your personal taste.
What you’ll need is:
- some potatoes
- a bottle of unsweetened soya milk (oat milk, almond milk, dairy milk, etc, will all work fine too!)
- a packet of Thornleys Cheddar Cheese Sauce Mix
- some butter (again either dairy or dairy-free)
- dried parsley
- salt and pepper
To make your cheesy mash, first wash and cube your potatoes (skin on or off is up to you), then boil them in a pot of salted water until tender.
In a separate pan, whilst the potatoes are boiling, prepare the Cheddar Cheese Sauce Mix according to the packet instructions.
Once the potatoes are fork-tender, drain and then return them to the pan. Add the Cheddar Cheese Sauce and some butter (adding just a little bit of butter at first, you can always add more later), dried parsley and some salt and pepper.
With a masher, mash the potatoes. Have a little taste and then add any extra ingredients to your taste (milk to make it smoother and lighter, butter to make it richer). Keep mashing until the mash reaches a consistency you’re happy with.
Serve alongside whatever you like to eat your mash with and enjoy!
