Eggplant, aubergine, purple wonder veg. Whatever you call it, it’s tasty. Aubergines seem to be an often neglected ingredient in Western cooking, but it doesn’t need to be that way! From curries and chillies to baba ganoush, the humble aubergine can do it all.

Burnt Aubergine Chilli

Baba Ganoush

If you like dips of any description, then baba ganoush should be a staple side dish. Think: aubergine hummus. Baba ganoush is creamy, smoky, smooth, and seriously delicious. In fact, if you make some of this stuff and have any leftovers then congratulations — you’ve achieved something truly extraordinary. Simple Aubergine Steaks

Here’s a really simple but very tasty Thornleys-style idea: thickly slice your aubergines into steaks, then fry them in a bit of oil until browned on either side, season with salt and pepper and serve with our creamy cracked peppercorn sauce. Eat on its own or alongside some homemade roast potatoes. Lovely.

Another recipe from Jamie Oliver, it would be wrong of us to exclude a pasta recipe from our list. One thing we love about aubergine with pasta is that it’s a combination most of us hardly ever consider. But it’s a match made in comfort food heaven. Just be sure to swap out the pasta for a gluten-free variety if necessary.
