Simple Gluten Free Spaghetti Bolognese
Serves 4
Ingredients
Splash extra virgin olive oil
1 onion
4 garlic cloves
1 tin chopped tomatoes
1 tin cooked brown or green lentils, drained and rinsed
1 pack Thornleys Spaghetti Bolognese Recipe Mix
400 g gluten free spaghetti
Method
Heat the oil in a pan over medium-high heat. Finely chop the onion, add to the pan, season with salt, and gently fry for a few minutes. Then add the garlic cloves and cook for another minute or so. Pour in the chopped tomatoes and drained lentils, reduce the heat and simmer gently.
Next, boil a pan of water for the pasta. Once boiling, add salt and then tip the pasta in.
Whilst the pasta is cooking, add the Bolognese Recipe Mix to a bowl and combine with a small amount of boiling water — just enough so that you can whisk it to make a smooth paste. Then add the paste to the pan with the tomato sauce and give everything a good stir.
Once the pasta is cooked to your desired texture, drain it (reserving a cup of the pasta water in case you’d like to add it to the sauce) then add it to the pan with the bolognese sauce. Mix until every strand of spaghetti is covered in sauce.
Serve and enjoy!
